Here are two great Christmas recipes for desserts or treats.
These recipes are from my mother who has often made these tasty treats during the holidays.

Miniature Cheesecakes-These are soooo good!

1/3 c. graham cracker crumbs
1 tbsp. butter melted
1 tbsp. sugar
1 8 oz. pkg. Philadelphia cream cheese softened
1/4 c sugar
1 1/2 tsp. lemon juice
1/2 tsp grated lemon peel
1/4 tsp vanilla
Can of Cherry Pie filling
Combine crumbs, butter and sugar. Press rounded measuring tbsp of crumb mixture onto bottom of each muffin cups. I use the little ones.
Combine cream cheese, sugar, juice, peel and vanilla mixing at medium speed on electric mixer until well blended. Blend in egg, pour over crust filling each cup 3/4 full. Bake at 325 25 minutes. Top with cherry pie filling just before serving.
Wrap chilled cheesecakes individually in moisture-vapor proof wrap, freeze. Let stand at room temperature 40 minutes before serving.

18 MacIntosh Toffee Bars
1 large box Rice Krispies (Christmas)
1 can Eagle Brand Milk
2 bags Marshmallows
1/3 c. butter
1 tsp. vanilla
In double boiler or mic melt toffee, milk, butter and vanilla. Dip marshmallows in melted mixture and roll in rice krispies. Set on wax paper. Put mixture back in mic when it starts to get hard.
